The Weber Genesis E-320 Gas Grill and the Sweet Onion Steak
There are many rituals in grilling and Springtime brings out a ton of them. All I need say is that if you own a Weber Genesis E-320 Gas Grill you are prepared to handle every one that comes at you. One of my favorites this time of year is the Sweet Onion Steak. When those Maui onions that are bigger than softballs start showing up at the Farmer’s Market, I know it is time to get prepared. It means the filet mignon of sweet onions is on the way.
I having been asking the produce manager at our Von’s for two weeks, “when will you get the Vidalias?” His response was “in a couple weeks” and then that turned to “soon.” Last Friday he said to look for them in next week’s ad. When the ad came, I grabbed it immediately to check it out and there they were!
Now I am running through my grilled onion recipes and one of my favorites is what I call the “Vidalia Filet.” One of life’s small pleasures is fresh French baguette and a serving dish of Extra Virgin Olive Oil (EVOO) and a seriously great balsamic vinegar. My variation is designed for the amazingly sweet Vidalia onion.
Since early season Vidalia’s may be a bit smallish, grab the biggest ones in the bin and slice your “steak” right out of the center of the onion. Make it as thick as you want, I do slight over ½ inch, basically slicing the heart out of four to six onions. When I first had a go at this, I actually marinated the slices in a bag with a mix of EVOO and the balsamic. All that did was provide me with a crunchy, grilled, balsamic flavored veggie. All of the sweetness and unique flavor the Vidalia was gone.
Success was found in simplicity when I just brushed the Vidalia slice liberally with the EVOO, with salt and pepper to taste. With your Weber Genesis E-320 Gas Grill at medium high heat, use your tongs to carefully put each slice on the grill rack. Now here’s the key, before you close the lid, lightly drizzle the upside of the Vidalia with your best balsamic vinegar. After the lid has been down about two minutes, open and turn the slices so they are vinegar side down and grill for another two minutes with the lid up. I prefer a bit of char on my “filet” but if you don’t, you need to watch the slices very carefully cooking at this temperature.
Remove and enjoy with the rest of the menu coming off your Weber Genesis E-320 Gas Grill.

Grill’n Veggies on the Weber Genesis E-320 Gas Grill
For many folks grilling is about meat, more like MEAT, and the rest of the meal or menu is prepared in your indoor kitchen. The great thing about the Weber Genesis E-320 Propane Gas Grill is that the 12,000 BTU side burner opens up several more options for controlling your cooking and dining experience right on your patio. However, having made that observation, we are always surprised by how many “sides” can be prepared right on the grilling grate of the E-320.
First things first, the grill grate needs to be thoroughly cleaned and the grate should be well oiled. On top of that, we generally make sure that any vegetables have been tossed or bushed with olive oil. I don’t use my expensive EVOO for this but you can if you wish. Flavored olive oils infused with your favorite seasoning, herbs and spices are wonderful for grilling. Dropped on a med-high to hot temperature grate, several veggies get wonderful textures and flavors that are a delightful change from steamed, griddled and pan-fried. If you like the flavor of a slight char on a food item, grilling this way is perfect.
Here’s how vegetable favorites can be done on the Weber Genesis E-320 Gas Grill.
#1 Asparagus is perfect for this and grilling gives it a really different flavor from streaming or even doing it on a George Forman. Great with flavored oils.
#2 Fried Green Tomatoes need to be put in a grilling basket or on foil with holes but they have a lot less fat than fried and the char flavor is great.
#3 Eggplant is a favorite whether sliced thin and crisped up or cut thick and done like a veggie steak. This is also true for a sweet onion like the Vidalia.
#4 Leeks and baby bok choy are done the same way. Sliced length-wise and oiled with balsamic, Worcestershire, or soy sauce and placed sliced side down, these are flavor filled.
#5 Corn on the Cob off the grill is a totally different flavor. Pull back the husk to use like a handle, oil up the corn, and put on the grill rotating often.
There’s a few ideas and I am sure people can come up with a lot more for things like bell peppers, squash, even mushrooms.

Weber Gas Grill Review
All around this is one of the best gas grills on the market for it's price. Take care of it and a Weber Gas Grill will last you for a decade and give you the versatility you want to grill most anything you can think of. The high quality parts, particularly the stainless steel burners will need an occasional cleaning, but will last you long enough to pass it on to your kids. People who own Weber grills swear by them and always buy Weber. This unit is also large enough to suit almost any need.

Tools: the Support Cast for Your Weber Genesis E-320 Gas Grill
It is safe to say that just about anything in the way of food can be cooked out of doors on a grill. Warm Spring weekends or Summer nights are perfect for moving both our kitchen and our dining room to the backyard. Once we get the outdoor living space right and our Weber Genesis E-320 Propane Gas Grill in just the right spot, it’s bring on the menu and the tools for the task of grilling.
Part of the beauty in the Weber Genesis E-320 is that it comes with some “tools” built right in. Great side shelf space and the 12,000 BTU side burner provide working space and a cooking area for menu items that “don’t do” the grill surface. Beyond the grill itself, the supporting cast of tools for the master griller has quiet a range. Here’s my top five.
#1 Since I really hate burns, I start off with an insulated mitt or grilling glove.
#2 Next are some seriously long handled utensils. Your tongs will be the king of utensils.
#3 A deep skillet and a non-stick pan for sautéing and sauce on the side burner. If you do cast iron, see grilling glove above!
#4 A grilling basket for fish, veggies and anything that might fall thru the grilling surface.
#5 Since I am a kabob nut, I have to have a set of long metal skewers.
The above cover the required cooking tools for enjoyable and successful outdoor cooking on a grill like the Weber Genesis E-320. There certainly are other candidates for the supporting cast. If you have not mastered the “poking and eyeballing” techniques for getting the right doneness, a meat thermometer will come in handy. If you have the rotisserie system, a long handled basting brush will keep you fingers above the grill’s heat.
And then, there is cleanup time. There are wire brushes and scrapers of all kinds and sizes and there are even battery operated cleaning devices available. Since we have a lot of morning dew, once the grate has cooled, I often drop it in the grass by the patio. Something about the grass and the dew really softens up the “yucky” on the grates and makes cleaning simpler the next morning.
